by Cessie Cerrato – With summer officially kicking off this month, the perfect way to spice up your upcoming barbeques and pool parties is with these finger licking recipes from Palace Resorts. Cuisine by Palace Resorts is made up of seasonal flavors that pack a punch, and our guacamole and margarita recipes are no different.

Below are two recipes for our iconic guacamole and classic margarita (with a Palace twist) that will give you a true taste for The Palace Life.


You can never have enough guacamole. The key to perfectly green guacamole is using ripe avocados, fresh ingredients and, of course, salt.

  • Ingredients
    • 3 ripe avocados
    • 1 large onion
    • 1 medium tomato
    • 2 tablespoons of coriander
    • The juice of 1 lemon
    • 1 teaspoon of salt

DIRECTIONS: Wash the ingredients and dice them into medium sized chunks. Place into a large bowl and crush together. Top with lemon and as much salt as you’d like.



It doesn’t have to be Cinco de Mayo to enjoy a refreshing salt-rimmed margarita. Palace Resorts properties only use top-shelf liquors, and we recommend using high-quality tequila in order to make this delicious summer cocktail.

  • Ingredients
    • 1 liter of water
    • The juice of 2 lemons
    • 5 ounces of orange liquor
    • 5 ounces of good tequila
    • 10 tablespoons of white sugar
    • 3 gelatin sheets

DIRECTIONS: Stir the juice from one lemon, gelatin, and boiling water together in a bowl until fully dissolved. Chill in refrigerator for 15 minutes. Stir tequila, orange liqueur, sugar and the juice of the second lemon into the gelatin mixture. Gently stir in more water. Freeze overnight.

  1. Lemons? Sugar? Not for me. Here’s a simple recipe I find delicious.
    2 parts quality Tequila. Don Julio Reposado works very well.
    1 part Cointreau. (Triple-sec has an astringent after taste in comparison)
    1 part fresh-squeezed lime juice.
    Wipe the rim of the glass with the lime and salt it, fill with crushed ice and pour in your mixture. Delicious.
