Ocho Rios’ newest resort welcomed International Association of Gastronomy
The Chaîne des Rôtisseurs Bailliage of Jamaica celebrated its 31st anniversary at Moon Palace Jamaica Grande with a black-tie affair, featuring Executive Chef Dennis McIntosh’s 10-course tasting menu. With over 25,000 members, the Chaîne des Rôtisseurs is an International Association of Gastronomy that brings together lovers of culinary arts. The association brings together amateurs and professionals, from all over the world. The menu was an eclectic mix of traditional Jamaican cuisine mixed with a dash of Mexican fusion. Delicious bites included Fresh Sorrel Taquito, Bulla & Pear featuring light avocado and mascarpone mousse with ginger bulla crumbles and tomato jam, and Short Rib Mole.. The first sweet course was dubbed Sunny-Side Up – fresh coconut rum foam with a passion fruit yolk and pineapple brûlée presented and styled to perfectly replicate a fried egg sunny-side up.
